Specialty Equipment - Baine Marie

  • Similar to a double boiler with one pan containing food placed inside another larger container of simmering water
  • Used to gently cook delicate foods like custards, white sauces or to melt chocolate
  • Prevents food from curdling, forming a crust (e.g., custard) or cracking (e.g., cheesecake)
  • Can also be used to keep foods warm
